100% HOMEMADE

All my products are 100% homemade by myself and my team of bakers and pastry chefs. I do not use improvers or other additives in any of my products and this is also true for my flour. I make my bread with homemade liquid sourdough. The sourdough gives a subtle flavour to the bread and increases its conservation time. The rise times are longer, upto 18 and 22 hours, to give the sourdough enough time to do its job: give taste and reduce the quantity of gluten and phytic acid. This is what makes my bread very easy to digest. After that, I bake in my stone deck oven to give the bread a deliciously crunchy crust and stop it from going hard. >> Read more
